Guacamole


I know, I know, I married a Mexican man, and eventually he'd want me to make some of his favorites like spanish rice, salsa (which I did in Hawaii), homemade tacos, beans (I'm nervous to try), and guacamole. I've never really made guacamole, I always bought the mix and the avacados and *poof* it was guacamole. Well we all knew that wouldn't fly in California! So when we got here I broke out all my cookbooks, consulting the cooking gurus to help me "cook" a tasty guacamole. Now I know there's not a whole lot to making guacamole, but I've actually had some bad stuff so I was a bit nervous. I just want to share what I came up with that my guys love.

Guacamole
4 ripe avacados
2 limes
2 cloves garlic, minced
1 tomato, finely chopped
1 serrano chili, finely minced
1 red onion, finely chopped
1/2 c cilantro (adjust according to taste)
salt and pepper to taste
Tapatio (or other mexican hot sauce) to taste

1. Using a fork or potato masher, roughly mash the avacados in a bowl (Don't make it too smooth).
2. Cut limes in half and squeeze in juice. (You can adjust how much lime juice you use based on the amount of juice the first lime gives you.)
3. Stir the lime juice and avacado, and add in the tomato, chili, onion, garlic.
4. Add cilantro, Tapatio, salt and pepper, gently mixing in.
5. Check seasoning.
6. Press a piece of plastic wrap onto your guacamole so that there isn't any air touching the surface.
7. Chill for 30 minutes.
8. Stir, recheck for seasoning, and serve.

yay, gwack! i love it! i like adding in some sour cream. that way, i don't need to put sour cream on my stuff separate. also makes the avocado go a little further, if you only have one or two, but you're feeding more than that. sneaky sneaky. ;p

sour cream is a great idea! i'll have to remember to try it, although i think robert will still add extra sour cream. *;P

lol...the recipes are for dinner ideas for others! i steal recipes from jamie too...also good for suggestions...i gotta remember to pu tup the taquitos i made...i burned myself pretty good and meant to take pix of the burn but forgot! *=)

Easy Chocolate Lovers Cheesepie (very rich)

Ingredients
3 packages(8 ounces) cream cheese softened

3/4 cup sugar

3 eggs
1 teaspoon vanilla extract

2 cups (12 ounce package) Hersheys mini chips semi sweet chocolate divided

1 extra-serving size packaged graham cracker crumb crust(9 ounces)
2 tablespoons whipping cream

1)Heat oven to 450
2) Beat cream cheese and sugar in large bowl with mixer until well blended. Add eggs and vanilla, beat well. Stir in 12/3 cups small chocolate chips; pour into crust.
3) Bake 10 minutes. without opening oven door, reduce temp to 250; continue baking 30 mins or just until set. Remove from oven to wire rack. Cool completely. Cover; refrigerate until throughly chilled
4) Place remaining 1/3 chips and whipping cream in small microwave-safe bowl. Microwave at high for 20 to 30 secs or jst until chips are melted and misture is smooth when stirred. Cool slightly; spread over top of cheesepie. Refrigerate 15 mins or until topping is set. Cover; refrigerate leftovers.

sorry I made that the other day and it turned out really good, but it is really rick.Thank god Im not allergic to chocolate!!!! Hope you guys try it, its really easy, LOL if I can do it anyone can
